The pie is very flaky, yet sturdy underneath with an ornate top crust and inside is topped to the brim with what tastes like braising steak. It is an unusual experience, as the meat flavours are so raw and distinct. It’s an intense experience which veers from dry to wet; the juices coming to the rescue when the meat gets too thick and dry, although noticeably some gravy has escaped and dried out on the tray. The meat is unfamiliar, with a slightly reddish colour to it, which I consider might be a little undercooked but Ives later informs me that it’s specialist Lincolnshire red beef particular to only a few Lincolnshire farms.
