This pie looks moodily dark even before it goes into the oven and I’m getting heartburn just looking at it, yet the crust is surprisingly light and holds its shape remarkably well. 8 From the second it goes in the oven, it’s like a swarm of invisible cheesy wasps are chasing me around the kitchen. It contains delightful slithers of succulent beef and a big layer of cooked jelly at the top; lots of saucy flavour throughout teamed up with Wye Valley Butty Bach ale. There’s a wonderfully full blooded flavour about it; meat that is cooked to perfection and enhanced by the presence of Stilton which I can’t actually see yet I can taste in every mouthful
