  3. Pieminister Shamrock Pie

As I’m sure everyone knows, Pieminster are two blokes from Bristol who love pies and have built up a cult following with restaurant stockists and stores, publishing books with recipes in and good luck to them. The world needs passionate pie makers otherwise fat bastards like me would have nothing to eat. They promise heaven and perfection on the box so I’m dreaming of big things during the twenty five minutes it takes to blossom in the oven. Upon removing it I cut it in half and I am viciously assaulted by the sublime waft of flavour and filling which jumps onto the plate. Hearty chunks of beef and carrot, it feels like a beef casserole yet perfectly encased in pie form. I wasn’t expecting the volume of carrots but they add plenty of variety to the bite. I don’t think this is a pie you can eat with your hands, the way the filling comes seeping out like an erupting volcano, although I do manage half by following the trusty method of keeping the open filling facing upwards. It is rich and rewarding with a mesmerising mix of ingredients (40 listed on the box!) plus a delightfully firm, crispy top crust sprinkled with oats which is a new one on me, the Pieminster offering throws up opulence personified in every mouthful.
